Another unusual release from Kilchoman, this isn't a finish, instead it's entirely matured in 300 litre Cognac casks which come from Tonellerie Bossuet. Kilchoman used a 50ppm heavily-peated new-make spirit, which then went into 32 300 litre French oak casks for a minimum of six years. The result was bottled at 50% ABV with no colour or chill-filtering.
Rich wafts of apples and pears with notes of honey, orange peel, baking spices, and smoky peat.
Creamy and buttery with lemon and apricot fruit, spices such as cinnamon and nutmeg, with toasty oak and peat smoke.
Long, with flavours of dried fruit, spices, and almonds.

Plenty of flavour, very interesting. Not many cognac cask whisky’s out there, so it’s quite different. Still has the signature Kilchoman flavour profile, with some buttery sweet oak. Plenty of smoke throughout too.
I love kilchoman, I have a a few bottles I save for special occasions and it's become my favourite islay whiskey. I could not stop thinking about this so I ordered it. It lacks the depth and character that I love kilchoman for and is even harsh and dry. At just 6 years old I assumed it must have just come round sooner than expected and would have all the notes of a classic kilchoman. It did not. It's just OK, definitely not worth £79. Could have done with another 6 years.
