Behold J.J. Corry's The Gael Irish whiskey, built using a blend of 60% malt and 40% grain, including some of the oldest whiskey stock in the bonder's library. It's aged in a combo of bourbon and sherry casks in the Cooraclare rackhouse and presented at 46% ABV. Initially, The Gael was released in batches before becoming a permanent expression in the core range after Batch 3, and over the years it has picked up numerous awards. J.J. Corry founder Louise McGuane named the whisky The Gael after the bicycle that her fellow entrepreneur (and Victorian kindred spirit) JJ Corry himself designed, built, cycled and sold.
Nose Sugary shortbread, peaches and cream, quite grassy at points.
Palate Lemon drizzle cake, honeycomb, softly savoury notes of rye bread and thyme in the background.
