    A fantastic addition to Duncan Taylor's The Octave collection, this single malt was distilled at the Highland Park Distillery in 1999, which feels like a millennium ago to us! Matured for an admirable 21 years before bottling in 2021, there was an outturn of only 67 bottles from this cask.

    Tasting Note by The Chaps at Master of Malt

    Nose

    Flapjack and caramel, floral honey, and lemon tarts with musty, earthen oak.

    Palate

    White pepper and horseradish prickle the palate, crisp coastal herbs and wafts of seaweed combine with sweet dried fruits and chocolate caramel raisins.

    Finish

    Heather and floral honey, brine, soft leather and faint smoke combine with oak char, sweet dark raisins, and dates.
