
Part four in the Quercus series from Sweden's High Coast, exploring the flavours imparted to whisky from different oak species sourced across the globe. Quercus IV Mongolica takes us to Mongolia, naturally, and the Quercus mongolica tree, closely related to Japanese mizunara. With a denser grain than mizunara, the folks at High Coast found Mongolian oak easier to work with while still delivering complex, aromatic notes to the whisky. Initially aged in ex-bourbon barrels before transfer to Mongolian oak casks to finish for 39 months, this single malt was bottled up at 50.8%, non-chill filtered and bursting with intriguing flavour.
Aromatic sandalwood, with apple peels, green grapes, and earthy spice.
Oaky vanilla, with tonka bean, ginger, and peppery allspice.
Drizzles of caramel and cinnamon with dried apricots in tow.
