
6 year old Irish single grain whiskey from the Hibernia Distillers Hyde range. This particular expression, No.5 Áras Cask, was finished in casks which previoulsy held Burgundy wine, imparting a distinct sweetness to the whiskey.
Strawberries, cherries and waves of brown sugar.
Iced buns, cinnamon, grapefruit and a touch of vanilla.
Dried fruits and mocha.

Disappointed… The bottle looks great but that’s about as far as it goes. The nose isn’t terrible, typical notes you’d expect from Irish whiskey. The problem is the palate and finish, the ethanol is way too high, the wine influence only adds a bitterness to the finish. I think a few more years in the cask would bring this up to par.
I thought it had somewhat similar characteristics as Tillamore Dew. Appearance, aroma and taste.
Obvious red wine/grapey cask influence here with red cherry, hedgerow berries and some fruity liquorice but overall a tad on the raw and youthful side and a bit like the jammy bit in those jars of Goober (peanut butter and jam spread)
Can't stop nosing this one. Unlike the notes above I get ample notes of red grape, cut Rose's, raw honey and nail polish remover. On the palate heavy vanilla, white grapes, nectarines and dried apricots.
