Bourbon

A textbook example of what happens when top-drawer Speyside spirit meets a well-behaved bourbon barrel and they get along famously.
This 2012 vintage GlenAllachie single malt was aged in a single bourbon barrel (cask #2083) for 12 years before it was bottled up at 61.3% ABV. It’s buttery, bold, and bursting with all the sweet-shop charm you’d hope for – but don’t mistake it for simple. This one’s got layers.
Opens with a full spread of vanilla fudge and buttered popcorn – like walking past a cinema snack counter – before orchard fruits roll in (think baked apples and pear drops). Glazed cherries bring a splash of colour, while a drizzle of heather honey adds floral richness.
Vanilla custard thick enough to stand a spoon in, chased by butterscotch buttons and a cheeky kick of cayenne. Grilled honeycomb gives it a toasted edge, and cinnamon buttercream softens things with a patisserie finish. There’s caramel, too – of course there is.
Warming, sweet, and satisfying.
