The first of three releases in GlenAllachie's Billy Walker 50th Anniversary Series, celebrating half a century of Billy Walker's hard work in the whisky industry. This edition, dubbed The Past, is a 16 year old single malt drawn from nine Spanish sherry casks selected by Billy Walker himself, bottled up at cask strength. 4,000 bottles were produced.
Waves of walnuts, heather honey and subtle dried fruits, followed by bursts of toasted coffee, orange peel and cinnamon sticks.
Lashings of fig syrup, caramelised muscovado sugar and roasted pine nuts with notes of heather honey, crystalised ginger and dried apricots.
