Islay Violets is a 33 year old single malt from the eponymous Hebridean isle, which was initially matured in American oak casks before being moved over to Cognac casks for a finishing period. These casks help to bolster the whisky's floral, fragrant flavour profile. It's impressive stuff, boasting oodles of violet, rose and pine notes, alongside candied citrus and subtle spices.
