Distilled on the 30th June 2000, this was initially aged in sherry hogsheads before it was reracked into a Burgundy cask on the 22nd November 2008. It was then finished for three years before bottling on the 18th January 2011. A release of 445 bottles.
Fruity and curiously complex. Notes of soy sauce and redcurrants, hints of toasted almond, rapeseed oil and houmous. Quite a bit of sweetness.
Quite sweet and fruity with more of those redcurrants from the nose. Has a slightly tangy/acidic note, with just a hint of apple pie and fresh cream.
Good length with some salinity, berry fruit compote and Greek yoghurt.
