Independently bottled single malt from Caol Ila, distilled in 2015 and released by Signatory as part of the 100 Proof Edition. After maturing for eight years in a host of first-fill oloroso sherry butts and hogsheads, the whisky was bottled at 57.1% ABV following the old-fashioned proof system, in other words, 100 proof.
Stewed stone fruits and dried apples back coastal peat and charcoal embers, while citrus zest and a touch of vanilla join in time.
Generous layers of smoke, salted toffee and dried seaweed, with charred oak and cracked peppercorns, grilled peach, and woody spice.
A touch of clove and anise join the coastal smoke, lingering beside sweet sherried oak.
