Bourbon

6 year old Caol Ila single malt, independently bottled by our very own fair and well-maintained hands as part of our Single Cask Series. This peaty treat from the isle of Islay was distilled in May 2011 and left to mature in a bourbon cask until September 2017, when it was bottled at cask strength without any of that there chill-filtration or any of those there additional colours.
Soft, sweet and salty with just a hint of smoke from wood ash. Rock pools and oysters form the core. Prominent breast malt notes and honeyed cereals complement exotic fruit, pineapple, and a sprig of wild thyme.
A little brine and caramel temper a ripple of fierce ginger spice. A milky latte with vanilla syrup and white chocolate shavings brings balance.
The coastal notes make a late rally among lingering rich spice.
Really quite impressive stuff here, this drama captures the essence of Caol Ila but has enough of its own personality to match.

A couple of weeks exposed to the air and this dram comes into its own. Drinks great neat, in small sips, but opens up wonderfully with a wee splash of water. Best of my last half dozen indy bottles of caol ila, so just ordered another ;)
