From Duncan Taylor's The Octave indie bottling series, which sees whiskies finished in small octave casks, comes a cracking Caol Ila single malt. It was distilled in 2008, and matured for 13 years, including three months in the aforementioned octave cask. Eventually, in 2021, it was bottled up at cask strength, with an outturn of just 90 bottles.
Smoked meats and spiced bread, with wafts of seaweed and cinnamon along the way.
Still richly coastal, though caramel and lemon do appear later on.
Rock pool minerality, diced almonds, somewhat grassy.
