Sherry

We do love a well sherried Aultmore, and this one makes an excellent addition to the collection from indie bottler Darkness! Matured for 10 years, the whisky was finished in a custom-made octave cask that previously held oloroso sherry. It's a hugely characterful sipper, brimming with oily nuts, dried fruit, roasted coffee, and biscuity malt.
Oily malt and a touch of brine are backed by heaps of sherried fruit, with dates, figs, and prunes aplenty.
Candied pecans, maple syrup, and sweet, creamy notes of Horlicks, with cocoa and some herbaceous spice resting beneath.
Some darker notes of forest fruits creep in, backed by fiery ginger and pepper, drying tea, choc chip cookies, and lingering biscuity malt.
