Sherry
21 year old single malt from the Auchroisk Distillery in the prolific Speyside region, independently bottled up as part of the Darkness range. This expression was treated to a finishing period in a specially-coopered Moscatel sherry octave cask, which has a greater surface area to volume ratio than regular casks due to being much smaller than regular casks. This means more interaction between the wood and the whisky, meaning more of those yummy sherried notes. Ideal.
Honey baked apples, Toffee Crisp bars, a few stray raisins and damsons.
Festive spices and more honeyed sweetness, now with tangy orange and toasted almond flakes.
A crackle of black pepper and cinnamon, contrasted by poached pear.
