Umami is an intriguing spirit from French distillers, Audemus, which ought to be very exciting for cocktail enthusiasts. Named after our fifth "basic taste", which is described as savoury (the others are sweetness, sourness, saltiness and bitterness), Audemus' Umami is produced with a caper distillate made from Sicilian capers and three other savoury ingredients, combined with a neutral grain spirit. Quite niche but very cool, we're sure this will make for some rather interesting twists on classic cocktails.
