Tequila is made from the blue weber variety of agave. The most common styles are blanco (unaged), reposado (rested in oak for at least two months) and añejo (aged for at least one year in oak). Meanwhile, mezcal producers are able to use other varieties of agave (there are over 30!), often grown semi-wild or wild. There are also differences in the processing and production of the two spirits that can influence their flavour profile. For example, agave is typically oven steamed in Tequila production, where mezcal producers cook it in stone-lined fire pits.
