Produced by maestro Jose Ines in Aguacatito, this unaged agave spirit was distilled exclusively from the Chino agave (a sub-species of Cupreata agave). The agave is fermented in shallow vats and double distilled in a Filipino still. It's only distilled once a year, so savour this one.
