Sin Gusano Castilla - Jayacatlán 50cl

This expression from the Sin Gusano selection was crafted by Maestro Isaac Cruz in San Juan Bautista Jayacatlán in Oaxaca, using Castilla agave. Cruz really roasts the agave, to the point of charring bits of it, which comes through in the spirit's flavour profile. He also uses an intriguing still, comprised of copper boiling chamber and a clay condensing chamber with a copper lid.
