Pure Wild Spirits
Freya Birch Spirit is a rather interesting idea indeed - to make it, the producers distil wild birch sap, resulting in an elegant, subtly earthy spirit! Enjoy over ice, or try using this in place of vodka in your favourite cocktails.

This is a great addition to the spirits cabinet. The branding oozes northern European clean living and uncluttered lines and imagery. The liquid is opulent with great mouth feel. But the memorable point is the taste. Surprisingly - and refreshingly - for a white spirit it has some classy dark spirit notes. Subtle agave, and I reckon there's some bourbon in there. I guess the fact it's distilled form birch sap gives it some light intrinsic woodiness without ageing. Beautiful. Punches through tonic nicely, so mixes well, but great just over ice
