Agave
Mexico
Herman Jansen
From La Travesia comes an agave spirit made in Santa Caterina Minas, Mexico. The agave was cooked for more than 30 hours in an oven made from quarried limestone and its juice was extracted in a proprietary machine. Fermentation in pinewood fermenters followed before the spirit was distilled in a copper pot still and bottled at 42.5% ABV.
Earthy smoke, sweet tropical fruit, cherry, charred bell pepper, mushroom, and sweet tobacco.
