
This complex wine-spirit-hybrid made from Naked and Pearled Barley, Belgian Saison yeast (sourced from the lab next door to Empirical Spirits) and koji. It also contains a kilo of habaneros in every bottle. The refined sweetness the chillis posses was then balanced by blending a distilled habanero vinegar.
Spice isn't going to be a problem for anyone worried about that aspect, as the capsicum was too heavy to distil. Instead, the habanero flavour shines without the heat in this exciting and experimental Empirical Spirits bottling that's something of a 'spirited' response to the President of the United States' opinions on border policy...
