
From the innovative Circumstance Distillery in Bristol comes Circumstantial Oat. A spirit made from a blend of malted oats and malted barley which was fermented for 12 days using French saison and mead yeast. After distillation, the oat-based spirit was matured for over four years in a combination of bourbon casks and charred British oak spindles (spindles are a sort of stick shaped thing, like the vertical bits on staircase railing). Very intriguing stuff this.
Syrupy flapjacks, with oily, toasted walnuts, leading to a medley of warming spices, oak character, and candied citrus peel.
