Always exciting to see sotol on these shores! This tasty spirit was created by the Sotomayor, including master sotolero, Gerardo Ruelas. Sotomayor Excepcional is made with a combination of three different varieties of sotol - namely Dasylirion Texanum, Dasylirion Leiophyllum and Dasylirion Cedrosaum. The sotol is cooked in a conical stone oven using mesquite wood and volcanic stone over four days, and it's then ground and fermented, before being distilled twice in a stainless steel alembic still.
Softly spicy at first with peppercorn and nutmeg, though soon becomes grassy and herbal with hints of mint leaf. A subtle touch of brown sugar develops later on.
