Heavensake Junmai Daiginjo
A splendid sake composed by acclaimed French cellar master Regis Camus, collaborating with expert sake brewmasters at the Dassai brewery in Japan's Yamaguchi prefecture. This junmai expression is produced from a base of yamada nishiki rice and boasts a wonderfully crisp profile of fresh orchard fruits and tangy, floral hedgerow berries. Bottled pure, without any distilled alcohol, this ought to pair rather nicely with hard cheeses and canapés.
