Salted almonds and fragrant, almost floral cardamom, pine oil, and dried berries. Burnt sugar and suggestions of citronella follow in time.
Savoury cooking herbs and spices take the lead, with notes of earthy forest floor and drying oak. Caramel-soaked prunes and raisins poke through, with that sherried oak bringing nutty sweetness.
Resinous wood oil, root ginger, and cinnamon sweeties bring tingles of warmth to the finish. Notes of fresh leather, dried pineapple, drying oak, and bittersweet orange peels linger.

This is really interesting. The Pedro Ximenez cask really shines through in the flavour and nose. Like spicy cake and raisins. Have used it in a few desert type cocktails and it works beautifully.
