In the 22nd addition to the Rum Sponge series from indie bottlers Decadent Drinks—in collaboration with Whisky Sponge—comes 25 year old single barrel rum. Distilled at Uitvlugt in 1998 and matured in a refill barrel for two years in Guyana, before being transported the to United Kingdom to finish its maturation. Only 194 bottles exist.
Experience with hushed awe such flavours as drinking cask-aged seawater, being miniaturised and inserted into the event horizon of a black olive, being shot with a grapefruit and sipping bandage distillate in the tropical evening sun.
It’s a good sipping rum and very clearly a Demerara Rum but save your self £150 and buy El Dorado 15 year old but this is not even as good as the 21 year old El Dorado. It has plenty of taste and is at 60% ABV so you can do a lot with this. It’s not sweet like the vast majority of golden rums but it has a slight brininess and lots of tropical fruit, It’s thick and oily and got those classic Demerara notes of molasses and burnt caramel.
