
Zuidam Distillery in The Netherlands makes outstanding rum, believe it or not. It begins life as imported molasses, which is then treated to long fermentation with multiple yeast strains, as well as double distillation in its pot stills, and then maturation for four years at source in a very old ex-solera oloroso sherry cask, before being shipped to the UK for bottling.
Batch 2 is a release of 488 bottles.
A nose packed full of all kinds of fruit - dried sultanas, raisins, and dates, along with cherry, red grape flesh, and hints of strawberries. Fresh coconut, butterscotch, and a hint of cumin and coriander seeds.
Soft and sweet onto the palate, with an oily golden syrup texture. Creamy vanilla. Roasted parsnips, brazil nuts, and dry oak.
A lingering finish of fresh ginger heat and leather and dark, bitter chocolate.
