
An exciting find from down under, brought to us by That Boutique-y Rum Company! This pot still rum hails from Australia's Riverbourne distillery, and reflects distiller Martin Pye's admiration for Jamaican rum production, making use of an array of yeast strains and even dunder during fermentation. The rum spent three years maturing in re-charred red wine casks from California's Napa Valley which were re-coopered to replace the heads with virgin American oak. A most impressive expression from the multi-talented distillery.
Batch 1 is a release of 106 bottles.
Fresh, fruity, and tropical, with juicy mango and papaya backed by woody spice, a touch of anise, and rich, runny caramel.
Layers of oily, sweet molasses, a funky note of rubber, and dense, jammy fruits join sticky dates and sultanas.
Cracked pepper heat arrives for the finish, joined by earthy coffee grounds.
