This right here is the first batch of rum matured in a virgin oak cask from the Ninefold Distillery to be bottled up by That Boutique-y Rum Company! Ninefold is based up in Dumfries and Galloway, Scotland, where it makes rum with Dr. Kit Carruthersin charge of the operation. With three-to-four day fermentations with multiple yeast strains, and a 500-litre pot still to helm, Dr. Kit must be busy indeed – but from the label, it looks like he's also had the time to learn the Highland Reel alongside Boutique-y's very own Peter Holland, a seraphim, and a cat in a kilt. Is that Robert the Bruce looking on approvingly, too?
Batch 1 is a release of 165 bottles.
Warming vanilla and toffee, with some oily oak and maple syrup.
