Ireland might not be the first country you think of when the topic of rum production comes up (which it regular does at MoM Towers), but the folks from Íon Distilling in County Tyrone are looking to change that. Introducing Íon Whiskey Cask Spiced Rum, made from scratch at Íon's distillery using blackstrap molasses along with a selection of botanicals including citrus, cassia, ginger and kola nut. It's allowed to rest in whiskey casks before being bottled up, imparting warming oak and more rich toffee notes.
