With a special focus on four key steps in producing rum – origin, aging, blending, and finishing, this impressive offering from Saison ought to hit the spot for all manner of sipping and mixing. The origin begins with a selection of molasses-based pot-distilled rum and sugarcane-based column distilled-rum from Barbados, Trinidad, and Jamaica. After up to five years aging in their native climates, the rums travel to France, ready to be blended by Cognac master Jerome Tessendier. Applying the same skills and know-how gathered from Cognac production, Tessendier delicately blends the rum, before allowing it to rest for nine months in French oak barrels, and bottling it up without any added sugar.
