The Pedro Ximenéz Edition is the latest show-stopping sherried single pot still whiskey, a showcase of the most beloved cask styles in whiskey and of the fine whiskey Redbreast crafts at the famed Midleton Distillery.

Redbreast Pedro Ximénez Cask Edition

Redbreast Pedro Ximénez edition is a Single Pot Still Whiskey, tripled distilled, initially matured in Bourbon and Oloroso Sherry casks before being re-casked in delectable Pedro Ximénez hogsheads from the southern tip of Spain, for a sweet finish.

Pedro Ximénez (PX) casks are prized in the whisky industry for their ability to impart rich, intense flavours to the spirit during maturation. Whisky aged in PX casks often develop notes of dried fruits like raisins and figs, along with sweet, syrupy flavours such as molasses, toffee, and chocolate.

Tasting Notes

Nose:

Hints of fruit, spices and toasted nuts combine with the subtly sweet aroma of Pedro Ximénez sherry seasoned casks.

Palate:

Lustau doubles down on the sherry influence all Redbreast fans love. The single-pot still Irish whiskey was initially aged in a combo of American and European oak casks for 9 to 12 years, before being transferred over to first-fill oloroso sherry casks from Bodegas Lustau for a further year.

This cask-strength edition of Redbreast 12 Year Old, Batch B1/23, was bottled at a robust 57.2%, amping up all that classic, rich, rounded Redbreast character. The whiskey was triple distilled in copper pot stills from a combination of malted and unmalted barley and the whiskey matured in a combo of American oak bourbon barrels and Spanish oak oloroso sherry butts.
