St. Giles Gin is the brainchild of Simon Melton, professional diver (and now gin composer), along with the help of head distiller Pete Margree and Anna, their copper still. They use a combination of 11 botanicals to create their desired flavour profile, including lemongrass, Grains of Paradise and rose petals.
Peppery juniper leads the charge, joined by fragrant hints of orange zest and earthy/floral elements on the mid-palate.
Tried this gin very recently and it's my new favourite! It's everything a gin should be, tasty and flavoursome
