Oxley Gin
As enthusiasts of all things science-y, we're big fans of Oxley Gin. It's distilled under vacuum - the distillate boils at -5 degrees Celsius, and re-condenses at -100 Celsius! That sounds like it shouldn't work, but the proof is in the pudding (or gin, in this case). This scientific wizardry captures some subtle, delicate flavours from the botanicals that might be lost when distilling in the usual way (y'know, with heat and all that).

Nose
Clean juniper aromas, with blossom, hints of soft pine needle, zest and dry herbs.
Palate
A herbal, zesty, almost effervescent palate with notes of juniper and grapefruit peel, as well as aniseed.
Finish
Star anise and soft juniper on the tail.
