Specifically, the small team uses dulse seaweed, alongside juniper and a hint of savory, to flavour this expression, resulting in a decidedly coastal gin that's packed with character. This is a really excellent and unique gin. I had it (and some of the other Newfoundland Distillery spirits) when I visited Newfoundland pre-Covid. The team there really prides itself on using fresh locally foraged ingredients to make unique flavours; the master distiller used to be a chef and really knows his stuff. It's definitely worth getting some now that it's available in the UK. When things open up, Newfoundland should be on your trip list; their tasting room is beautiful. Their rums are also excellent.
