Banyuls is a French sweet fortified wine produced in the southeast of the country, close to the Spanish border. Have you ever wondered what it would be like to fill a cask with it for a while, then, once that cask has soaked up plenty of character from the wine, empty it out and fill it with gin? It's just the sort of thing we wonder about all the time, and luckily, we had all the apparatus to give it a go right here at MoM Towers. Aged for 19 months in a Banyuls wine treated octave cask, 60 bottles now join our exclusive Master of Malt collection. If you're into crafting cocktails your brains probably ticking with all sorts of ideas already, and if you enjoy your spirits neat, this gin offers a superb way to explore a lesser-seen cask finish.

Toasted, honeyed almonds, hazelnut cream, woody juniper and pine needles, with delicate notes of stone fruits and caramel beneath.
An array of soft peaches and plums alongside elegant juniper and butterscotch. There's a hint of floral tea beneath, with dried stone fruits, toasted oak.
A smidge of burnt brown sugar brings balance to woody, botanical spice, with caramelised fruits trailing off toward the end.
