All the way from Ireland's west coast comes Galway Gin, inspired by the top-notch local produce. The star of the show with this gin is dillisk (a type of seaweed) from Galway Bay, which imparts wonderfully savoury maritime elements to the flavour profile, supported by notes of oily juniper, lemon and cardamom. Excellent served with a few basil leaves...
Strong juniper followed by coastal air and sea salt. A helping of fresh lemon stops it from becoming too savoury. A bite of spicy cardamom on the finish.
