Inspired by the Old Tom gins of yore and the resurgence in its popularity, Northern Ireland's Boatyard Distillery have created their own take on the traditional style of gin. To make it, they age their excellent Boatyard Double Gin in bourbon barrels, then sweeten it with Fermanagh honey. Wonderful in a Martinez.
