Vault Vermouth
Vault Aperitivo, originally Vault Vermouth, started in 2018. It's a modern distillery focusing on vermouth and botanical aperitifs. Dan and Sharon Joines founded it. Its first location was Sorella, an Italian restaurant in London co-founded by Dan in 2018.
The founders were inspired by European trips and the tradition of aperitivo. They felt this was underrepresented in the UK. In 2022, Maire & Max Chater of Victory London Distillery joined. They brought experience and a shared interest in aperitivo.
With this new phase, Vault Aperitivo updated its brand and expanded its range. It also added storytelling. The company is environmentally conscious. They aim to build a responsible business.
The company partners with Ecologi. They plant a tree for every order. They use energy-efficient methods in production, like cold distillation. This saves heating and water. Their packaging is eco-friendly. They use biodegradable and recyclable materials.
This includes recycled glass stoppers, UK-made glass bottles, plant-based seals, and up-cycled labels from materials like Bagasse, hemp, and linen. They use 100% recycled cardboard for delivery packaging, avoiding plastic air bags or bubble wrap.
