Stonehouse Distillery, founded by Shane and Alison, combines years of brewing and distilling expertise with a passion for crafting unique spirits. After leaving their previous distillery, they brought with them 50% of the ageing whisky stock they had helped to create. Early in 2024, Stonehouse installed a 400-litre German column still, affectionately named Matilda, and began producing a range of small-batch gins, including a juniper-forward London Dry and a vibrant Strawberry & Lime Gin. While their whisky expressions mature, Stonehouse is releasing limited-edition single-cask whiskies from their earlier stock, offering whisky enthusiasts the chance to experience these exclusive releases. As a small craft distillery, Stonehouse takes an adventurous approach to whisky-making, carefully selecting and experimenting with cask types and finishes. The whisky is initially aged in ex-bourbon casks, with regular tastings to determine optimal finishing barrels, sourced with the help of Speyside Cooperage. This hands-on process ensures each whisky is distinct, reflecting the character of its unique maturation journey. Stonehouse’s commitment to quality extends to its vodka, which is quadruple-distilled and charcoal-filtered for exceptional smoothness, making it a versatile addition to any home bar.
