Spain’s first urban micro distillery, Santamanía, is named after the Spanish term for obsessive, attention to detail and doing things a certain way. It was founded in 2014 by Javier Domínguez, Ramón Morillo and Victor Fraile, though the idea itself began in 2011. From the conception of the idea to the first actual batch produced was 761 days, and so the first batch was named 761. The reason it took so long was precisely because it was the first urban distillery in Spain, so new rules had to be written, and it took nearly a whole year just to get the license. They chose to use a grape-based spirit for Santamanía Gin, simply because of the tradition of distilling grapes in Spain! They also have a grain-based gin, named Lola y Vera after the two stills.
