Over the last decade, Maison Saint Aix has significantly updated its estate, from the vineyards to the cellar, incorporating advanced technology such as temperature-controlled stainless steel tanks, pneumatic presses, and modern harvesting equipment. This technological advancement supports the winery's goal to produce high-quality rosé that reflects the characteristics of Provence.
The estate follows a structured replanting schedule, renewing up to 4 hectares of vines annually to ensure sustainability and land harmony. The grape harvest occurs in early September, conducted in the cooler morning hours to maintain grape freshness, prevent oxidation, and preserve the wine's delicate aromas.
