Maison Saint Aix is a notable winery located in the AOP Coteaux d'Aix-en-Provence appellation, recognised as one of the largest domains in this area and positioned at an altitude of 420m, making it one of the highest vineyards in Provence. This elevation benefits the vineyard by providing cooler nights and a more pronounced effect of the Mistral winds, which help in drying the vines on dewy mornings and improving grape quality. The winery specialises in producing AIX Rosé, utilizing a blend of grenache, syrah, and cinsault grapes, which thrive in the region's mineral-rich soils, ample sunlight, and the tempering Mistral winds. The presence of 50-60-year-old Grenache vines contributes to the high-quality 'jus' produced, while younger vines add freshness to the wine. Over the last decade, Maison Saint Aix has significantly updated its estate, from the vineyards to the cellar, incorporating advanced technology such as temperature-controlled stainless steel tanks, pneumatic presses, and modern harvesting equipment. This technological advancement supports the winery's goal to produce high-quality rosé that reflects the characteristics of Provence. The estate follows a structured replanting schedule, renewing up to 4 hectares of vines annually to ensure sustainability and land harmony. The grape harvest occurs in early September, conducted in the cooler morning hours to maintain grape freshness, prevent oxidation, and preserve the wine's delicate aromas.
