InchDairnie Distillery
InchDairnie Distillery is a Scotch whisky distillery in Fife, founded by Ian Palmer. The distillery is known for technical innovation and flavour-led production, with releases including RyeLaw, a single grain Scotch whisky made with malted rye and malted barley, and the heavily peated Kinglassie range.
InchDairnie is not trying to look like a postcard distillery from 1890. Its equipment includes an unusual hammer mill, mash filter and a Lomond Hill still, giving the team flexibility to work with different grains and processes. Starting with its first spirit run on Christmas Day 2015 until today, InchDairnie has explored the edges of Scotch, playing with winter barley, unmalted barley, rye, wheat and oats, Scotch sour mash, and what is legally recognised in Ireland alone as single pot still whisky.
RyeLaw is the headline release so far. Its mash bill uses 53% malted rye and 47% malted barley, with rye content above 51%, though Scotch regulations mean it is labelled as single grain Scotch rather than rye whisky.
InchDairnie is one for whisky drinkers who like production detail. It achieved a B Corp certification in March, scoring 95 points after a nearly two-year assessment.
