Rémy Martin's XO combines grapes from the Grande and Petite Champagne regions of Cognac, expertly selected from the house's hundreds of eaux-de-vie and meticulously blended by its cellar master. Aged in oak for at least 10 years, its character is allowed to mellow and mature, bringing sumptuous notes of vanilla, spice, and caramel to the soft fruits, citrus, and pastry notes at its core. I am relatively new to cognac so I ordered some samples to test my palate. As someone new to cognac I didn't find a lot of reviews to help someone new to the drink so I purchased some samples and thought I would give my reviews to help anyone new to the world of cognac. I purchased a sample of this Remy Martin XO two weeks ago. I really enjoyed the nose of this drink very fruity, plumbs and raisins and spicy with some orange in there. The palate was spicy with some fruit and very warm, the finish was spicy and did leave a little burn on the back of my throat compared with the Ragnaud-Sabourin Grande Champagne XO which had softer tannins.
