A second vintage of this single estate Grande Champagne Cognac from the excellent Hine, taken from a very small number of selected casks - for the 2006 vintage, only 19 barrels were used, all of which were refill French oak.
Mixed peels and liquorice with hints of Parkin and honey developing. Dates and custard emerge from the background too.
Some minerality keeps things in shape, with rounded buttery cake, allspice, dried apricot, red apple and quince notes.
Shortcrust pastry, some citrus curd and cape gooseberries.
