The Dom Pérignon 2013 vintage proved much less tumultuous than the 2012, with the pinot noir and chardonnay grapes ripening exquisitely thanks to sun-filled summer in the Champagne region. Striking a perfect balance between refined and rich, this Champagne should age very well indeed, but if you can't wait, then it makes an ideal pairing with the freshest of seafood.
Green notes – eucalyptus, mint and vetiver – combine with yellow-orange notes of mirabelle plums, apricots and orange blossom, along with pepper, cardamom and liquorice and ending with saline and toasty notes. The mouthfeel is elegant, refined, silky and luxuriously simple, while the finish is dominated by a deep salinity.
