Dom Perignon Plenitude 2 bottlings are a level up of fancy from 'ordinary' Dom Perignon. They are kept back by the cellar master at DP until they reach the requisite standard before releasing when they are absolutely perfect to drink. This example comes from the excellent 2004 vintage. It's a blend of 65% pinot noir and 38% chardonnay all from Grand and Premier Cru vinyards. It spends 16 years ageing on its lees before it was disgorged in 2021.
Rich nose of flaky pastry, lemon and meringue, with rich yeasty notes. On the palate it's full and fruity with peach and green apple followed by hazelnut, and toasted brioche.
