We've seen some adventurous cask finishes from Calvados producer Christian Drouin before, and here is yet another unexpected, and ingenious expression. Joining the Experimental series, this Pays d'Auge Calvados was matured for ten years, including a finishing period in a pair of casks that previously held Calle 23 Tequila! The casks have imparted suggestions of earthy nuts and vegetal olive, giving a fascinating lift to the familiar stewed apple notes at its core.
Oily, earthy truffles, and walnut oil, with green olive and singed herbs leading to creamy vanilla, and baked apples. Roasted nuttiness lingers throughout, alongside layers of powerful orchard fruit, and soft oak spice.
