I find the 5 star Metaxa much sweeter than 7 star or even the 12 star! Perfect night cap on its own.

5 Star Metaxa is a lovely Greek Spirit. Pop an ice-cube in it and sip away, splendid.
It sounds like you don't know about the star system Metaxa have. Metaxa use stars in place of the years so a five star is 5 years old and a seven star is 7 years old and so on but about the flavour change, I do think you have some thing there, the flavour has changed but I don't think it has anything to do with age. There are to many variables.
