The ageing of a whiskey has a huge impact upon its character, the vast majority in fact. Whiskey is matured in oak, of the genus Quercus, and there a range of species used, from the European Oak to the Truffle Oak. We have some well-aged 50 year old whiskeys. This make for a superb 50th birthday gift, or as a replacement for the traditional - and thoroughly flavourless - gold as a 50th wedding anniversary present. We have some superb 50 year old Irish whiskeys. These are often rounded, smooth and balanced. There are superb single malts as well as pure pot still whiskey. These well aged whiskeys offer a wide variety of flavour, and at this age, superb balance is often attained.
